Update!

Hey Everyone!
I know I haven't been posting lately, things have been pretty crazy.  We are looking for a new apartment, and we don't have much time.  We had our hearts set on a very nice apartment, but it didn't end up

working out.  We now have less than ten days to find a new one, apply, get accepted, and write a written notice to our apartment.  Needless to say, it's a bit stressful! School is done for the summer now and I am ready to have a great one! I started off my summer last week, visiting an awesome city--St.Louis, Missouri.  My boyfriend's cousin graduated from the Nursing School at SLU.  Here are some awesome pictures we ended up taking from the trip.



















  



Easy Mexican Lasagna

Hey Everyone! I hope you guys are having an awesome Easter weekend!  I've been really busy lately with work, and school.  Things are going good, and in May i'm taking a trip to St.Louis (is it bad i'm counting down already?!).    Anyway, here's a delicious recipe for Mexican Lasagna that one of my co-workers gave me.

Ingredients:
Package of Flour Tortillas (I used burrito sized)
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 can of green enchilada sauce
1 16oz container of sour cream (I used light)
2 cups of cheddar cheese
2 lbs of hamburger meat
9X13 Pan

Directions:
1) Brown & Drain the meat
2) Mix soup, sauce, and sour cream together with meat
3) Cut tortillas to make more square-like and keep the ends you cut off for fill-in spots
4) Place tortillas in bottom of pan until all is covered, arranging square pieces and fill-in spots
5) Spread a layer of the meat mixture on top of the laid out tortillas and sprinkle cheese on top
6) Keep layering the tortillas with the mixture and a sprinkle of cheese (you can usually get 3-4 layers)
7) Top with another layer of tortillas and the rest of the cheese
8) Bake for 20 minutes @ 375 degrees or until cheese is melted
