Update!

Hey Everyone!
I know I haven't been posting lately, things have been pretty crazy.  We are looking for a new apartment, and we don't have much time.  We had our hearts set on a very nice apartment, but it didn't end up

working out.  We now have less than ten days to find a new one, apply, get accepted, and write a written notice to our apartment.  Needless to say, it's a bit stressful! School is done for the summer now and I am ready to have a great one! I started off my summer last week, visiting an awesome city--St.Louis, Missouri.  My boyfriend's cousin graduated from the Nursing School at SLU.  Here are some awesome pictures we ended up taking from the trip.



















  



Easy Mexican Lasagna

Hey Everyone! I hope you guys are having an awesome Easter weekend!  I've been really busy lately with work, and school.  Things are going good, and in May i'm taking a trip to St.Louis (is it bad i'm counting down already?!).    Anyway, here's a delicious recipe for Mexican Lasagna that one of my co-workers gave me.

Ingredients:
Package of Flour Tortillas (I used burrito sized)
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 can of green enchilada sauce
1 16oz container of sour cream (I used light)
2 cups of cheddar cheese
2 lbs of hamburger meat
9X13 Pan

Directions:
1) Brown & Drain the meat
2) Mix soup, sauce, and sour cream together with meat
3) Cut tortillas to make more square-like and keep the ends you cut off for fill-in spots
4) Place tortillas in bottom of pan until all is covered, arranging square pieces and fill-in spots
5) Spread a layer of the meat mixture on top of the laid out tortillas and sprinkle cheese on top
6) Keep layering the tortillas with the mixture and a sprinkle of cheese (you can usually get 3-4 layers)
7) Top with another layer of tortillas and the rest of the cheese
8) Bake for 20 minutes @ 375 degrees or until cheese is melted
9) ENJOY (:

How To Remove Glitter Nail Polish

Hey Everyone!

I thought I would share a little beauty trick I learned in Cosmetology school!

I love glitter nail polish, well lets face it I love anything that sparkles! But I hate
taking the glittery polish off. It always takes forever and I never seem to get it all. 

Well I learned this neat little trick. It's easy and cheap and you can find all the supply's
laying around your house somewhere. I hope you enjoy!!!!

Delicious Shredded BBQ Chicken or Pork

Hey everyone! Hope your week is going good, it's going by super fast for me.  The weather is gross here in the city, and I'm looking forward to Spring!  I've been quite busy with work and school and I was happy that my dad passed along this delicious recipe the other day.


Ingredients
Hard Rolls*
3 Cups BBQ sauce
1 cup onion chopped
1/2 cup Ketchup
1/2 cup Brown Sugar
1 tsp Salt, 1 tsp Pepper
1 tsp chili powder
2 lbs Boneless Chicken Breasts or Boneless Pork Roast (Quartered up)
*Depending on your head count, choose the number of rolls

Easy Directions
1) Stir everything in a medium sized bowl
2)Pour mixture into Slow Cooker
3) Add chicken or pork
4) Coat with extra BBQ sauce
5) 4 1/2 hours on high
6) Shred (Two forks works just fine)
**I used a fork to take the chicken out and placed them in another bowl
After shredding with the forks, I placed the shreds back into the Slow Cooker
Mix it all together,
&
ENJOY! (:



p.s.  I got six rolls for the two of us--had leftovers and even may have some extra even after the rolls are gone! (:

So I made these crafts awhile ago and I am still loving them. I chose to make galaxy socks, shoes and a scarf but you can really do it to almost anything. It is super easy. Check out my youtube video for a demonstration.

Strawberry Lemon Cake Pops

                                                                   Hey everyone! 
I realize you could probably go to any blog, or any website and find out how to make cake pops. But, I thought that you may wanna hear it from a not-so-pro (or at least yet!). 

I received a cake pop kit from my sister for christmas and I immediately was excited to get started on them.  My first thought was I had to get a cake pop maker, but I found out you don't need one! (does everyone know that, or was it just me?)  

This handy dandy book has all sorts of ideas and directions on how to make cake pops and other sweet goodies as well!  I decided to just follow directions, and go off with something I thought of myself.  I decided on a base of strawberry cake with lemon frosting as the cake pop mixture.  I used white chocolate as the covering.

 Ingredients
1/2 baked and cooled 13X9-inch cake*
1/2 cup plus 2 tablespoons frosting
1-2 package (14 to 16 ounces) candy coating (It depends on how many colors you choose to use for coating, if you use a solid color you should be fine with one package)
24 lollipop sticks
Foam block (a floral foam block works fine)

Decoration Examples**
Decorator frosting, mini chocolate chips, gumdrops, color taffy/gummy strips, sprinkles/decors, licorice strips, sparkling sugar, sugar pearls, small colored candies, the list goes on!

*Per book instructions, Prepare a cake from a mix according to package directions or use your favorite recipe. Cake must be cooled completely.
**Choose which decorations you'd like to use
If you want a really cool idea, google images is a great tool for this!

Once your baked cake is completely cool, this will take hours 2-3 hours at least.  Cut the cake in half, and place the half into a bowl.  Use your hands to crumble and create small tiny crumbs so all cake is crumbed up.  It should look like this:








I then added the frosting (1/2 cup PLUS 2 tablespoons) 
Mix using your hands.  It gets a little messy but it is a lot easier than if you were to use a spoon or something else.  The mixture then looked like this:
I didn't think i'd have enough for 24 pops but I was wrong!

 The directions then says that each cake pop should have about 2 tablespoons of mixture per pop.  I wasn't too technical about this I basically just eye-balled them.  Place the pops on a cookie sheet, and once you are done place plastic wrap on top of them and place in freezer for ten minutes or the fridge for at least an hour.

I had to make dinner, so I decided I'd place them in the fridge and get back to them after dinner.  It was over an hour, and the pops still didn't seem firm enough.  I placed them into the freezer for a few minutes while I got the chocolate melting.  Lesson learned: Make sure you follow the melting instructions (I over melted part of mine, and got frustrated).   I found it easiest to melt the chocolate in a coffee cup because it was deeper and easier to dip the pops into them.


This is not a clean project--I had a messy chocolate coated counter!
Place the sticks a 1/2 inch into the melted chocolate and place each stick halfway into each of the pops. This was a hard task for me to do, because I had no idea how far I was supposed to go!  They probably ended up further than they were supposed to be, but I think it turned out just fine.  It looked like this:

Then, came the most difficult part. Dipping these little suckers into the melted chocolate.  To me, there is no easy way to put this or describe how to dip these things easier.  It involves lots of twirling, because you need to try to attempt to keep the chocolate smooth throughout.  

P.S. This may have something to do with the chocolate I used.  I used Log House Candiquik white chocolate.  I have used this brand and kind for strawberries and it's worked perfectly.  I don't know if I would use this type again or not.  

Once you dip the cake pop, and twirl the necessary coating off the pop, leave it upright (this is where your foam block/stand comes into play)  Wipe the excess coating off where necessary.

While they are still a little damp, start decorating!  If you are using licorice or other bigger decorators you can let them dry completely before placing the items on pops.  You can use some candy coating to use as glue on the back of the item and adhere it to the pop.  


Cake Bites!

I only made a dozen cake pops and the rest I created these bite size bits! It was getting late and making the actual cake pops are very time consuming, and I was getting impatient.  After they all hardened, I stored both the pops and the bites into tupperware containers and stored them in the fridge.

*Peppermint* Hot Chocolate

There is nothing better than cuddling up in a mound of soft, fuzzy blankets with a delicious cup of Hot Chocolate, especially in these cold winter months. Check out this delicious recipe that's fast and easy to make. 

1 cup Marshmallows
1 cup milk chocolate chips
1/2 cups white chocolate chips
1/4 cups crushed peppermint candy (optional)
12 fluid oz evaporated milk
1 1/2 cup water

Pour everything into a pot and stir until everything is melted and smooth! 
Takes about 5 minutes and make 3 - 4 servings
